- 2 jars of marinated artichoke hearts
- 1 small onion finely chopped
- 1 clove of minced garlic
- 4 eggs
- 1/4 cup of fine dried bread crumbs
- 1/4 tsp salt
- 1/8 tsp each of pepper, oregano and tabasco
- 2 cups of grated sharp cheddar cheese
- 2 tbsp of minced parsley
Drain marinade from 1 jar of artichokes into a frying pan. Discard the marinade from the second jar. Chop artichokes and set aside. Sauté the onion and garlic in the marinade until the onions are translucent. Beat eggs with a fork, add bread crumbs and seasoning into the egg mixture. Then stir in the cheese, parsley, artichokes and onions. Fold into a 7 x 11 greased pan and bake for 30 minutes at 325 degrees. Let cool in the pan and then cut into bite size pieces. Bon appetit!
